As the temperature drops and the cozy season approaches, restaurant chains are turning up the heat with a deliciously indulgent trend: cheese. From inventive burgers to decadent dips, melted cheese is making a major comeback on menus across the country. This fall, several popular franchises are capitalizing on the comforting appeal of cheese to attract customers seeking both value and flavor.

Franchise Favorites Embrace the Ooey-Gooey

Applebee’s recently unveiled its inventive O-M-Cheese-adilla Burger, a unique creation that features a burger stuffed inside a quesadilla, then dunked in a skillet filled with melted cheddar and queso. This fusion of two comfort foods highlights the growing appetite for creative cheese offerings. Meanwhile, Golden Chick introduced its own queso for just $1, catering to customers eager for affordable, cheesy indulgences. Freddy’s Frozen Custard & Steakburgers is also embracing the trend with its Baconfest promotion, layering crispy bacon atop cheese-covered tots and burgers through November 3.

The trend extends beyond burgers and dips. Denny’s has centered its new burger lineup around American cheese, reinforcing the classic appeal of melted cheese. Panera Bread added a Three-Cheese Lasagna Soup to its fall menu, blending rich cheeses into a comforting seasonal dish. Additionally, Qdoba launched “Diptember,” a month-long promotion featuring 14 dips and sauces, headlined by a new Queso Fundido that emphasizes the versatility and crave-worthiness of cheese.

Why Cheese? The Comfort and Value Equation

Dr. Chad Moutray, chief economist for the National Restaurant Association, explains that “comfort and value are the twin pillars shaping America’s menus right now.” According to the association’s 2026 What’s Hot Culinary Forecast, comfort foods, value pricing, and global flavors are the industry’s top priorities. Melted cheese checks all these boxes by offering a familiar, satisfying experience that feels indulgent without significantly increasing production costs.

Cheese’s inherent qualities—its warm, melty texture and rich flavor—tap into consumers’ emotional desire for comfort, especially in uncertain times. Plus, it provides restaurants with an efficient way to add perceived value to dishes without sacrificing profitability. The widespread adoption of cheese-forward menu items among franchises underscores its power to drive customer engagement and sales.
