A good decaf coffee rarely reveals the meticulous craftsmanship behind it. What reaches your cup—whether balanced or flat, sweet or dull—often conceals the countless decisions made long before brewing. At Dekáf Coffee Roasters, this unseen labor is front and center, as the company builds its reputation on delivering decaf and low-caffeine coffees that retain character and complexity.
Dekáf Coffee Roasters was founded in 2025 by seasoned specialty coffee veterans Anil Mezini and Khanh Nguyen. Their goal: to bring the same rigorous standards usually reserved for highly caffeinated coffees to the often-overlooked decaf category. While the concept of “less caffeine, same quality” seems straightforward, the reality demands precision and care at nearly every stage of production.
Altered Beans
Decaffeination is far from a neutral process. By the time green beans arrive at Dekáf, they have already undergone chemical or water-based extraction methods that alter their physical and flavor profiles. Dekáf exclusively uses Swiss Water® Processed coffees, a chemical-free method that preserves much of the bean’s original character but still requires specialized roasting techniques.
These changes narrow the margin for error during roasting. Excessive heat can strip sweetness and mute the coffee’s unique notes. Simply applying the same roast profile used for regular coffee will often result in a flat, lifeless cup. Instead, decaf demands a tailored approach that respects its altered chemistry while striving to retain balance, sweetness, and structural integrity.
Adjustment Work
Dekáf’s commitment to excellence extends across a spectrum of caffeine levels, from fully decaffeinated to carefully blended low-caf options. To accommodate these, the company employs distinct roasting workflows. Small-batch samples are roasted on an Ikawa Pro100 for precision, decaf production runs on a Coffee-Tech Ghibli R15, while low-caf blends with caffeinated beans are handled on a Loring S35 roaster. This segregation ensures each batch receives the specific attention it requires.
Maintaining purity across shared equipment is a critical yet often overlooked challenge. Residual beans and grounds can contaminate batches if hoppers and cooling trays are not meticulously cleaned between runs. Dekáf’s process-oriented approach ensures that the caffeine level is an intrinsic product feature, not merely a marketing label applied after production.
Roast profiling is equally customized. Each coffee variety within Dekáf’s lineup receives its own unique roast curve, tuned to highlight its best attributes despite lower caffeine content. This dedication preserves the distinctiveness of every coffee, showing that caffeine reduction need not come at the expense of flavor complexity.
In the Cup
All the technical craftsmanship culminates in the sensory experience. A well-executed decaf coffee from Dekáf demonstrates that sweetness, balance, and character can survive decaffeination. It is a cup that invites enjoyment, not merely tolerance.
Ultimately, Dekáf’s decaffeinated range embodies the philosophy that excellence is the sum of many deliberate choices. What may appear as a simple cup reflects an intricate process honed by expertise and care, ensuring that low- and no-caffeine coffees are anything but an afterthought.
