Some restaurants use YouTube to market their business, while others leverage the platform to help build one from the ground up. Inside Fallow, a popular restaurant in London, both are true. The venue buzzes with customers daily, and online, its presence is even more vibrant.
Will Murray and his business partner Jack Croft began posting videos years ago with the simple goal of drawing attention to their restaurant. They never imagined they would become YouTubers in the process. “If you can craft a narrative and create long-form content that people really engage with, they are the type of people that are going to come and eat at your restaurant,” Murray explains.
This strategy has paid off handsomely. Since launching their content four years ago, Fallow’s social media has grown by 333%, generating between 85 million and 110 million views monthly across platforms. The primary motivation was to offer viewers an authentic window into the restaurant’s world. “Creating the restaurant and the business is the hard part. Creating a good window into it is actually more straightforward,” Murray adds.
Rather than chasing viral trends, the team focused on documenting real moments behind the scenes, with the restaurant and its founders becoming recurring characters in their own story. A pivotal moment came from a quiet Saturday brunch when they introduced the Royale with Cheese—a laminated croissant inspired by the film Pulp Fiction. Sharing a photo of this creation online resulted in approximately 1.6 million views and helped fill their Saturday brunch seats for four consecutive months. Today, Fallow routinely serves about 1,000 guests every Saturday.
For Murray, this experience underscored a critical lesson: compelling storytelling can do more than grow an audience—it can build a thriving business.
The Philosophy Behind Their Storytelling Success
Murray emphasizes that expensive equipment isn’t necessary to succeed on YouTube. While many videos on the platform boast polished production, there are plenty of ways to create engaging, high-quality content using just basic tools. His advice? “Scrappy, not Spielberg.” Keep content organic and authentic. If all you have is a phone, you’re more than capable of reaching millions online. The key is not to overcomplicate the process.
Among Murray’s favorite creators is Canadian restaurateur Steve Droulis, admired not for slick production, but for his genuine authenticity. “He just seems like a bloke. Turns on the camera, you get what you get. I just love it because it’s completely authentic and organic to what he does,” Murray says.
On the other end of the spectrum, Murray points to Michelin-starred chef Adam Byatt, whose videos feature everything from simple cooking demonstrations to classical French techniques. Despite their differences, Murray believes the best creators share one trait: genuine passion. “If you don’t want to do it, don’t do it. People will see that straight away,” he warns.
In a challenging UK restaurant environment marked by rising costs and intense competition, embracing social media fully is essential. “There’s just not enough meat on the bone unless you’re willing to engage massively with social media and pull every lever that’s available to you,” Murray notes.
Ultimately, Murray’s goal was never to become a YouTube star. It was to give people a compelling reason to walk through Fallow’s front door. The cameras, views, and subscribers have simply followed. “Running a business is tougher than ever with soaring costs in every different aspect, so communicating to your audience is more important than ever,” he says.
